The Thomas Keller Restaurant Group is looking for a New York-based Head Baker. This Baker will oversee the bread programs for our fine dining and retail operations at Per Se and Bouchon Bakery. We seek an individual who will provide leadership to create a culture and work environment based upon respect; providing opportunities for staff to learn, grow and develop their abilities. Successful demonstration of this will be evident by employee satisfaction and retention of those under your supervision
Qualified candidates will have at least five years of prior baking experience with some at a managerial level. Mastery of traditional European and artisanal techniques through hands-on training with a renowned Master Baker and knowledge of non-wheat and naturally leavened products is a must. The Head Baker will be able to work at the highest level maintaining a pristine bakery with exacting standards.
